A lively appreciation of the colours, textures, smells and tastes of seasonal cooking are developed during this course and there is a strong therapeutic element to working with our senses. We cover a spectrum of cookery skills – each step being the foundation for the next challenge. Emphasis is placed on quality and consistency and students will engage with the whole process. Theory work complements the practical nature of the course, resulting in personalised recipe collections.
A close connection is nurtured with The Mount garden, which we visit regularly to understand the seasonal growing cycle and to experience harvesting of produce. Students enjoy the practical challenge of cooking the occasional lunch for their Houses and hosting guest lunches to demonstrate and share their chosen cooking themes.
Students who choose this course will become increasingly familiar with a range of ingredients, equipment and techniques. They are encouraged to master as many basic skills as possible from making shopping lists, planning menus, preparing food, learning safe cooking and kitchen hygiene methods, weighing, measuring and recipe sequencing through to timely meal presentation followed by much appreciation from their friends.
